When trying to decide what to write about for my first post, I enlisted family and friends for their input. Comfort foods? Desserts? Breads? Pasta? Bread was the unanimous winner….
I have a bucket list of foods I want to learn to make (and make well) and bread has always been on the list. The scary part was how do you learn to make bread without eating it all…you don’t. So, accept that it will be a temporary staple in your home and embrace the carbs. There is nothing like the smell and taste of freshly baked bread.
I tried a variety of techniques and recipes but kept coming back to The New Artisan Bread in Five Minutes a Day. I use their Master Recipe but tweak it with ingredients we love (crispy pancetta, asiago, pepper jack, rosemary, etc) to really make it my own. It is easy and doesn’t require the kneading, waiting, kneading some more, waiting some more ritual that so many recipes call for. I make the dough, let it rest, and pop it in the fridge overnight until I need it. Seriously, master this technique and you will never want to buy bread again….
