There is a farm stand in the town where I grew up…right next to the freeway and little league fields called Tapia Brothers. Below is one of the recipes they handed out years ago, which has been tweaked over the years by my family members.
Ingredients:
8 Italian sausages (I use hot)
1 large sweet onion – chopped
4-8 zucchini – I mix crookneck, pattypan, whatever is freshest
4 large green chilis – Hatch/Anaheim/Poblano depending on how hot you want it.
4 small chilis – Serrano/Jalapeno/Fresno
4-5 ears of corn, off the cobb
4-5 large tomatoes
4 cloves garlic – chopped
1 teaspoon red pepper flakes
Shredded cheddar cheese
Brown the whole sausages in oil in a good sized dutch oven and set aside for 10 minutes. Slice and brown with onions and garlic.
Roast chilis under broiler until skin pops. Peel, remove seeds and membranes and chop.
Chop zucchini and tomatoes. Add all of the above ingredients to pot and cook on low heat for several hours.
Serve in bowls with shredded cheddar cheese and corn bread.
